Baked Polenta with Bacon and Bellow

Polenta in layers with bellows cheese and bacon

Today, was definitely another Lego day. We managed to build another 2 Lego sets. That is actually a lot, considering that we have all our Lego pieces mixed together. Although it took us a lot of time to find the missing Lego pieces, we had enough time to talk about various topics, like: feelings, animals or weather.

In the afternoon we took our Beagle to a walk in the woods. It gives our dog immense pleasure for him to take long walks in nature. Although he’s 11 years old, he loves to run around and sniff all kinds of smells.

Later, we cooked an interesting meal: Polenta in layers with cheese and bacon. It is my grandmother’s recipe, an easy-to-make meal witch tastes great. You can find the recipe below.

Polenta in layers with cheese and bacon

Ingredients

  • 6 strips of bacon
  • 1 cup cornmeal
  • 2 cups water
  • 2 tablespoons butter
  • 1 cup bellows cheese (or Gruyere cheese)
  • Salt to taste

Directions

Cook the bacon until crisp, then take it out of the cast iron on a paper towel. Then, make the polenta: add the 2 cups of water, a bit of salt and 1/4 cup of cornmeal in a large pot. Wait for the water to simmer, then add the rest of the cornmeal and mix it well so as not to form lumps. Let it simmer on low heat for about 10-15 minutes (mix it periodically), until it thickens and the cornmeal is cooked. Add the butter and mix it. Add half the polenta mixture into an oven-safe skillet. Cut the slices of cheese and place half them on top of the polenta layer. Place the bacon on top of the cheese and then add another polenta layer. Add the rest of the cheese on top. Put the skillet in the oven and bake it for about 20 minutes, or until the cheese melts and its edges are a bit crispy.
